A wine of structure and depth from the elevated slopes of the Hautes-Côtes de Nuits, this Pinot Noir from Domaine Manuel Olivier is crafted from 30-year-old vines at 350 meters altitude, just one kilometer from Clos de Vougeot . The 2023 vintage delivers a “firm, powerful, and full-bodied” wine with a bright ruby color and aromas of ripe red fruits and subtle spices .
Vinification follows traditional methods: hand-harvested grapes are completely destemmed, undergo cold maceration with indigenous yeasts, and ferment with frequent punch-downs . Aging lasts 12 months on fine lees, split between stainless steel and oak (one-third new), resulting in fine tannins and an elegant finish .
Pair with grilled meats, lamb, cured meats, or cheeses, served at 16°C . With aging potential for several years, this is a wine that rewards patience while remaining approachable in its youth .
