A typical product of Northern Italy, Bresaola is a dried and salted beef that has been aged for two or three months until it becomes hard and dark red, almost purple.
On the palate, the taste has hints of spice like garlic, pepper, and juniper. Compared with many other cured meats, this Lombardian meat is a lean meat with a good nutritional quality.
