Bresaola (Sliced)

An iconic specialty of Lombardy in Northern Italy, Bresaola is prepared from select cuts of lean beef, air‑dried and seasoned with sea salt and aromatic herbs. Over two to three months of curing, the meat develops into a striking ruby‑to‑garnet hue, with a firm yet supple texture and virtually no marbling.

Sliced paper‑thin, it reveals an exceptionally tender mouthfeel that remains light and refined. On the palate, its clean, savory character unfolds with subtle notes of garlic, cracked black pepper, and juniper, offering a delicately spiced flavour profile that is both lean and well‑balanced.

An elegant choice for starters and healthy dishes, it pairs beautifully with peppery arugula, shavings of aged Parmigiano‑Reggiano, a drizzle of extra virgin olive oil, and a squeeze of lemon or balsamic vinegar.
