Fromagerie des Bries-de-Saint-Rémy, located in the heart of the designated area along the Grand Morin in Saint-Rémy-de-la-Vanne, now produces the region’s bloomy rind cheeses in a unified workshop. To rejuvenate this establishment, which highlights the Briard country’s treasures, a rich historical terroir, skilled cheese artisans, and a focus on traceability and product quality were essential.
Brie de Meaux, named after its region, is known for its creamy texture and rich flavours. Made from raw milk and handcrafted, it offers a delightful combination of butter, cream, and mushroom notes. The Brie de Melun is smaller than the Brie de Meaux. Its yellow paste is creamier with brown or orange spots. With its woodland aroma, it exhibits more pronounced flavours.
