The Netherlands is Europe’s leading producer of Brussels sprouts, with a Dutch season extending from late July to mid-April.
Raw, Brussels sprouts have an earthy, vegetal taste with a slight, pleasant bitterness. When cooked correctly, they become tender and mellow, developing a sweeter, savoury and lightly nutty flavour. Cooler weather – and especially a touch of frost – helps convert starch into sugar, creating a sweeter, more balanced sprout.
For the best result, avoid overboiling: cook only until just tender to preserve their colour, texture and delicate sweetness.
