Cheese Type: Uncooked, Unpressed cheese
Born in 1985, Cabrioulet is the first cheese of a long serie. Philippe Garros, the producer, wanted to created something different than the usual Pyreneean cheese with firm paste: that’s how was born this supple, creamy goat’ s milk cheese. Made as an homage, by its name, to the goats cheese called in Pyrennees, Cabriou, the raw milk product is easily recognizable by its chilli – from espelette- line in the center of the paste. The paste is creamy and onctious and the aromatic bouquet is rich in sensation: nutty, brioche flavours, slightly citrusy. The cheese is beautiful on a toasted rye bread paired with a Madiran without any acerbity.
