The sweet Provencal specialty par excellence!

Listed as a living heritage of the city of Aix-en-Provence, the history of the calisson goes back to the time of King René in the 15th century.

Legend has it that the King’s confectioner made this delicacy to delight Queen Jeanne on her wedding day.
She named these delicacies “di calin soun” (they are cuddly in Provencal).

The recipe for Calisson d’Aix has remained unchanged since its creation. Confectioners have always made this complex mixture of finely crushed sweet almonds, candied melon from Cavaillon in Provence and orange peel, all set on a bed of rice paper, covered with a case of royal icing.

    Crunchy almond icing and light melon aerated fudge (or lack of a better descriptor). It’s hard to stop eating them, which is why it’s a good thing it doesn’t appear every month…
