Cathare is a soft, ash-coated goat’s milk cheese originating from the Languedoc region in southern France. Shaped into a flat disc and adorned with the Occitan cross, it reflects the rich cultural heritage of its birthplace. Beneath its grey ash rind lies a smooth, ivory paste that offers a delicate, fresh taste. As the cheese matures over two to four weeks, its flavour becomes more pronounced, developing subtle notes of herbs and a gentle caprine character.

Cathare pairs beautifully with a glass of Chablis. The wine’s minerality and bright acidity bring out the freshness of the cheese while cleansing the palate between bites, creating a crisp and elegant harmony.
