Beneath its fairly light, pale gold dress with green huer, this white expresses a very fresh, lively and mineral nose; with notes of flint, green apple, lemon, as well as undergrowth. Age makes it a little more golden and spicier.
On the palate, its aromas keep their freshness for a long time. Smooth and persistent finish. Dry and of a perfect finesse, this Chablis has a unique and very recognizable personality.

Matured cheese, Beaufort, Cheddar, Gruyères, old Comté and soft/creamy cheeses with intense flavours such as Brie, Camembert.

This was quite unlike any chablis I have had previously. I’m not sure if it was an off bottle, but blind I would have said it was a cheap Chenin Blanc, or even possibly a riesling. There’s a lot of sweet, ripe, over-extracted(?) fruit, and quite some acidity. The minerality and finesse that I look for in chablis was absent.
