From the Savoie mountains, Chevrotin Fermier by Maison Paccard is a raw goat’s milk cheese with a soft, wrinkled rind. Its interior is dense yet creamy, revealing delicate hazelnut and wild herb notes. The paste transforms from chalky to molten as it ages, offering a clean, lingering tang.
Maison Paccard’s affinage refines this fermier cheese for 3 to 6 weeks in humid cellars, turning the rind slightly orange. They brush it with brine to develop a supple texture under the crust. This slow ripening balances the goat’s acidity with buttery and mushroom undertones.
Pair with a Savoie white wine like Jacquère or a light Gamay. For cider, choose a dry Normandy. Serve at room temperature on a chestnut board, alongside fig jam or fresh pear to highlight its earthy complexity.
