Aldabia is a cooperative of 15 farms in the Basque Country that has specialized in free-range poultry farming for over 30 years. Their chickens are raised slowly—at least 91 days—on GMO-free cereals, most of which are grown directly on their farms. This deep-rooted commitment to animal welfare, local agriculture, and traditional methods results in poultry that’s both flavourful and responsibly produced.
The Chicken Araignée, marinated with Espelette Pepper, offers a bold yet balanced flavour. The marinade adds a gentle heat and subtle smokiness that perfectly complements the naturally tender and juicy chicken. This cut is ideal as a centerpiece for a simple yet refined meal.
For a perfect pairing, enjoy with a French red wine such as a Pays d’Oc IGP, Vieilles Vignes, Domaine de la Jasse, 2021—its soft tannins and ripe fruit complement the Espelette pepper without overpowering the dish.
