Cooking instructions:

• Remove chicken from fridge 30 minutes before cooking. Pat dry inside and out.
• Season generously with salt, black pepper, and fresh thyme.
• Stuff cavity with lemon halves, garlic cloves, and rosemary sprigs.
• Truss the legs. Rub skin with softened butter or olive oil.
• Preheat oven to 400°F (200°C).
• Place chicken breast-side up in a roasting pan or cast-iron skillet.
• Roast for 50–70 minutes (about 15–18 minutes per pound) until juices run clear and thigh reaches 165°F (74°C).
• Let rest for 15 minutes before carving. Serve with pan juices.
