The recipe, patiently developed and carepiecey guarded, is inspired by the cider served at Château de Sassy. It has been reworked with Maison Sassy two Michelin-starred chefs to satisfy the most demanding palates and give pleasure to those who taste it. The fruits are rigorously selected from 12 varieties of pears grown on trees most of which are over a hundred years old.
Delicate and refined, it is particularly distinguished by the finesse of its bubbles, the purity of its aromas and its tangy finish which subtly balances the natural sugar of the pear. Lively, acidic and not very tannic, it leaves a light and tender finish.
Perfect as an aperitif and goes very well with shellfish, fish and chocolate desserts.
