Created in 1995 by few producers who wanted to rassembled their know-how, Coeur d’Alvignac is a creamy raw goat’s milk cheese located in Alvignac in the heart of the Regional Park of the Causses du Quercy. The wrinkled and flowery rind heart shape and the ivory colour paste make this cheese easily recognizable. When this AOP cheese starts aging, a thin layer of cream, smooth and shiny is formed in the border of it but it keeps its chalkiness in the center. Nutty, fresh milk note and sweet it is nice on a slice of sourdough walnut and raisin bread.
