Cœur de Neufchâtel is one of the oldest cheeses in France, with a history dating back over 1,000 years! It is said that during the Hundred Years’ War, French maidens would offer Cœur de Neufchâtel to English soldiers as a symbol of their love.
In addition to its lovely shape, this cheese has a delicious creamy and yoghurt-like taste.
Try it by itself with a slice of bread or try to cook it in the oven for 15min at 200°C with a drizzle of olive oil and some potatoes and ham on the side. Simply marvelous!
Store it in the fridge in cheese paper for up to 2 weeks.

The texture is ok. But the aftertaste is a bit spicy which I didn’t expect. I had it with sourdough as well. But not my taste

There are three layers including the rind when I get the cheese. The center paste has light acidity and a yoghurt-like taste as described which I like:) But the middle is runny and very salty. The rind is similar to the triple cream cheese–BRILLAT-SAVARIN. It is a unique cheese that may not be my thing. I will try it on toasted sourdough as it is really salty.
