This exceptional wine is crafted from old vine Savagnin grapes grown on our terroir “Les Grands Roussots.” The grapes come from our oldest plots, and the aging process is conducted with “topping up” in oak barrels from the Jura, specially made for our estate. This confidential production showcases the essence of our commitment to quality.

On the nose, the wine reveals a subtle and aromatic intensity with notes of toasted oak, white-fleshed fruits, spices, and citrus. The aromatic persistence is enduring, with a bouquet that evolves into a solid and juicy profile. Generous fruit aromas indicate a harvest at full maturity, enveloped in a refined oak character. With a bit of aeration, the wine opens up to a purity that remains true to its roots.

On the palate, it presents an impressive, lively, and fresh attack, with a slight tannin of minerality, complemented by a subtle wood grain. The structured mid-palate reveals notes of yellow flowers, alongside a toasted imprint from the oak aging, delivering amplitude and power. The balance is exquisite, where the acidity provides a straightness that supports the structure. The finish is solid, fresh, and showcases a great nobility.

Ideal for serving as an aperitif with fine charcuterie, this wine shines as a gastronomic white, perfectly pairing with dishes such as chicken with morels or veal blanquette. It also complements pan-seared scallops, langoustine ravioli in yellow wine butter, fennel, and green apple, as well as perch fillets.
