Discover the rare and naturally sweet Côtes du Jura AOC, Vin de Paille, part of the great French dessert wines. This exquisite wine is crafted from a careful blend of Savagnin, Chardonnay, and Poulsard grapes, hand-picked bunch by bunch at the beginning of the harvest. The selected grapes are placed in crates on a bed of straw for approximately 4 months, allowing them to wither and dehydrate, concentrating their sugars. From 100 kg of grapes, 15 to 18 litres of must are produced. The fermentation process is very slow, and the Vin de Paille ages for three years in oak barrels without undergoing any mutage.
On the nose, this nectar offers enticing aromas of candied fruits, blonde caramel, honey, and cinnamon, balanced by a delicate acidity. The finish is explosive. On the palate, it opens with a lively attack, showcasing a pleasant and elegant sweetness, evolving generously into a complexity of aromas, with a refreshing finish where the acidity provides balance.
This Vin de Paille will be the star of your aperitifs, pairing beautifully with dishes such as stuffed pigeon with raisins and gentle spices, as well as foie gras and chocolate desserts (like three-chocolate fondant with orange marmalade). It also complements strong cheeses like Roquefort and blue cheese. Serve very chilled, at around 8 °C, and enjoy its remarkable aging potential of 15 to 50 years.
