The Weavers have been farming in the Cotswolds for three generations, and in the South West of England since before 1570. They proudly follow a traditional method of organic farming and place great store in caring for land and animal welfare. Their closed organic herd enjoys a forage-based diet, and their milk production is not forced.
Crafted by smoking it over gentle Applewood chips in a compact smokehouse, this Brie undergoes a midway rotation during the smoking, ensuring that the smoky essence envelops the entire cheese. While this soft cheese retains a somewhat firmer texture, its subtle smokiness introduces an extra layer of flavour that beautipiecey enhances the overall taste.
This cheese is perfect for a light lunch, perhaps paired with cider. It also shines as a welcome addition to a dinner party cheese platter.
Store in the fridge, wrapped in cheese paper, and consume within a few days.

Rain –
The smoke taste is subtle but it does gives a more complex taste to this cheese, making it different from a normal brie.
