Established in 1930 by Etienne Dongé, the small cheese dairy is located in Triconville, a village with just 150 inhabitants in the Meuse region of France. Today, the passion for the art of cheesemaking has been passed down to the third generation, and it is the brothers Luc and Jean-Michel DONGÉ, supported by their family, who continue to uphold this time-honored craftsmanship.
A little bit thicker and creamier than its cousin Brie but also smaller in size, the cheese has a mushroomy, buttery and nutty taste.
Sometimes, slightly sharp it is the best serves with berries at the end of the meal.
Store in the fridge, wrapped in cheese paper, and consume within a few days.
Wine Pairing:
Red wines (Beaujolais, Cote Beaune)
White wines (Sancerre)
