Under the guidance of Christian Janier, Meilleur Ouvrier de France, this cheese is chosen for its elegant form and complex, balanced flavour profile.
This ash-ripened goat cheese is shaped into a signature “crown” (couronne) with a striking velvety white rind dusted with vegetable ash. Beneath lies a smooth, creamy paste that becomes increasingly supple with age. The flavour is delicate and refined, offering a tangy, fresh goat milk character that is beautifully balanced by subtle earthy and nutty notes from the ash and aging process.
Ideal as a centrepiece on a cheese board, it pairs exquisitely with a dry, crisp white wine such as Sancerre or Pouilly-Fumé. Enjoy it with fresh baguette, honey, or lightly dressed salad leaves. Its creamy texture also makes it perfect for spreading.
