Cheese Type: Uncooked, Unpressed, soft cheese with natural rind
Covered with a thin layer of ash, this slighthly wrinkled raw goat cheese, from Loire Valley, is recognizable by its ring shape that looks like a crown, hence is name in French, Couronne de Touraine. The paste is white, firm, and homogeneous. Young, it develops some goatty and vegetal notes alongside a fresh acidity with a fluffly texture. Aged, it gets an interesting intensity and becomes more creamy on the edges and firmer and crumblier in its centre.

My all-time favourite goat cheese! It’s usually a little on the unripe side when this cheese is delivered to me so I leave it in my fridge for another week before eating it. It’s such a gooey hot mess. Highly recommended.
