Cheese Type: Soft cheese with washed rind
First produced in St Julien de Concelles In Vendee by a monk during the French revolution, the cheese has a yellow straw to orange colour with a sticky, soft and supple washed rind. The paste is smooth and elastic and it has a smoky and slightly spicy taste with milky notes. You can eat it accompanied by some pear or apple slices and a glass of mellow wine as a muscadet or Gewurztraminer.
