Produced by the Geneste family farm in the Auvergne region, this artisanal cheese embodies the pastoral traditions of its terroir. Drawing inspiration from the renowned Saint-Nectaire, it is crafted with a focus on producing a characterful yet exceptionally smooth and approachable cheese.
The cheese is distinguished by its natural, rustic rind which can develop varied hues of white, grey, or brown. Beneath lies an ivory-coloured paste that is unctuous, supple, and dotted with small holes. The flavour profile is well-balanced, offering earthy notes of dry hay and underwood complemented by fresh, milky sweetness.
A wonderfully versatile cheese, it is perfect on a cheese board accompanied by dried fruits and nuts. It pairs beautifully with a light, fruity red wine from the nearby Saint-Pourçain region. For a simple meal, enjoy it melted over potatoes or in a rustic grilled cheese sandwich.
