Produced by the Geneste Farm, in Auvergne region, the cheese is similar to Saint-Nectaire but probably smoother. The rind can get varied white, grey or brown colour and the paste is ivory, onctious and supple with some small holes inside. Dry hay and underwood flavour with fresh and milky notes, this cheese is pleasant to have with some dry fruit and a light and fruity red from St Pourcain.
