This robust and rustic cheese is a star of Corsican heritage. Made from raw sheep’s milk and often infused with local herbs from the maquis scrubland, it features a firm, crumbly texture and a complex, powerful flavour. Its profile is deeply savoury and tangy, with notes of wild herbs, dried grasses, and a pleasant, lingering saltiness.
Perfect for the boldest cheese boards, it pairs wonderfully with a full-bodied red wine such as a Côtes du Rhône or a robust craft ale. Enjoy it with dark bread, fig jam, or charcuterie. Grated, it can also add a powerful punch to pasta or vegetable gratins.
Storage: Keep refrigerated, wrapped in paper. Allow to reach room temperature before serving to fully appreciate its robust aroma.
