For perfect results, score the skin, sear skin-side down to render the fat, and finish in the oven to your preferred doneness. It pairs classically with a fruit-based sauce like cherry or orange, and sides like sautéed potatoes or braised red cabbage.
Cooking Guide:
1. Bring to room temperature for 20 minutes. Pat dry and score the skin.
2. Season. Place in a cold pan, skin-side down. Turn heat to medium and cook for 6-8 minutes until skin is crisp and golden.
3. Flip and cook for 2-3 minutes for medium-rare. Rest for 5 minutes before slicing.
