In 1998, Martine Lembeye, the daughter of a cheesemaker, created a local cheesemaking venture to safeguard the traditional cheesemaking heritage of the Béarn and Basque valleys against industrialization. This artisanal approach has fueled the cheese factory’s success, and it continues as a family-run business, now with Sébastien Lembeye, Martine’s son.
The Fleuron D’Aramits stands as the emblem of this cheese dairy, playing a pivotal role in its local acclaim. This delectable cheese harmonizes the creamy essence of cow’s milk with the distinct nuttiness of sheep’s milk, resulting in a remarkably gentle flavour profile.
Great to eat it anytime with walnuts, apple or cherries to bring freshness to this mountain cheese.
