The preparation of duck foie gras is a beautiful tradition in France. This recipe came from the grandmother of the owner of Valette. This is how traditions remain, the transmission of know-how is done in the kitchen from generation to generation. Our traditional recipe is carefully deveined by hand and seasoned simply with salt and pepper, then moulded by hand in their jars.
