La Fromagerie Sainte Godeleine, managed by Les Frères Bernard have been producing cheese on the Côte d’Opale (Hauts-de-France) for more than 30 years. Antoine Bernard, the oldest of the two brothers, founded the fromagerie in 1990, after his year long trip cycling across the regions of France. Fruité du Cap Gris-Nez is a love letter to French cheese, a product of decades-long experience and the legacy of rich traditional teachings.
The cheese is made from pasteurized milk sourced from cows only a few kilometers away from the dairy. Typical of northern cheeses, Fruité acquires its orange hue from its rigourous rind-washing process. And, the Bernards added a creative twist by using a local blonde beer for the wash. Typical of orange cheeses, Fruité is tangy and pungeant. A sharp contrast to Fruité’s white heart, whose scent is significantly more restrained but nonetheless rich in fruity aroma.
Fruité du Cap Gris-Nez should be paired with a partner who, like the cheese, is familiar with the aromas and traditions of Northern France. Pairing it with a crisp Dry Cider whose sparkling acidity beautifully combines with the cheese’s aromas, should do the trick.
