Originating from the city of Vichy, known for its ancestral cheesemaking abilities thanks to the exposed and grassy pastures of the Monts du Lyonnais and the range of peaks arouond the city, the Laiterie de Vichy has outdone itself with the ewe-milk Fumaison de Brebis.
On the outside, the Fumaison has a log-like appearance with a dark rind. On the inner layer of the rind, you will notice proof that this cheesre was smoked using traditional cheesemaking savoir-faire. On the inside, the Fumaison is coarse, typical of sheep cheese. Fumaison’s particularity also resides in its crevases, contributing to the strong taste.
For pairing, Fumaison de Brebis goes hand in hand with a glass of white Chardonnay, whose spicy and exotic aromas perfectly enhance the Fumaison’s taste.
