Shoulder ham, also known as “paleta” or “paletilla” in Spanish, is a type of cured ham made from the front leg (shoulder) of the pig, rather than the hind leg, which is used for traditional ham or “jamón”. The curing process for shoulder ham is similar to that of traditional ham, but because the shoulder is smaller and has a different muscle structure, the texture and flavour can be slightly different. Cebo de Campo Shoulderham specifically refers to ham from free-range Ibérico pigs that have been fed a combination of natural forage and grains.
The shoulder ham is meticulously cured, resulting in rich marbling and a tender texture that melts in your mouth. The flavour is a harmonious blend of nutty sweetness and savoury depth, characteristic of high-quality Ibérico ham.
