Originating from the same dairy as Chèvre du Vieux Moulin, the Hervé du Vieux Moulin is another example of this dairy’s expertise when it comes to making tasty, unique and creative cheeses.
Hervé du Vieux Moulin is made from local cow’s milk. Despite having a different milk base, it is just as tangy as its goat’s milk counterpart, Chèvre du Vieux Moulin. Hervé is creamy and buttery, also possessing fruity aromas coming from the beer used in its manufacturing process.
We suggest pairing Hervé with its brother, Chèvre du Vieux Moulin. This will make for a fantastic compare and contrast cheese tasting experience, with a blond beer from Brasserie de Silly as the cherry on top.

Gina May Adeva –
Very pungent smell. Tasty. However consistency is very runny. Even more than fully ripe Epoisses.
Nicolas Guyon –
Creamy and buttery cheese with tangy notes and fruity aromas, enhanced by the beer used in its creation
