Crafted in Switzerland’s Toggenburg region by visionary cheesemaker Willi Schmid, Jersey Blue is an exclusive small-batch blue cheese, available for the very first time locally in limited quantities. Made from the rich raw milk of prized Jersey cows, it develops delicate blue penicillium veins naturally, creating a cheese with remarkable character, complexity, and depth.
On the palate, it is luxuriously creamy and spoonable, yet delivers a bold and powerful character. Notes of sweet butter, fresh cream, earthy mushroom, and intense blue spice unfold in layers, leading to a long, complex finish. Despite its strength, the rich Jersey milk brings exceptional balance, giving the cheese a rare combination of intensity, elegance, and refinement.
