Kasseri, also known as Kaseri or Ksara in Turkey, is one of the most well-known Greek cheeses with a unique and unmistakable flavour. It is a Protected Designation of Origin (PDO) cheese made using the same traditional recipe for over a century by Proikas Dairy in Sohos, Thessaloniki, Greece. Produced since the 19th century, this cheese is traditionally made with goat’s and sheep’s milk from the Sohos region, without any preservatives or additives.
Kasseri is a semi-hard, pale-yellow cheese with a mild buttery taste that makes it a popular cheese.
Enjoy it as a table cheese, after leaving it out of fridge for half an hour to release its flavours, accompanying a glass of wine, as a snack with a bagel, in sandwiches and toasts.
Kasseri can also be fried like the famous Greek dish Saganaki (check out the recipe here) or be used as a surprise ingredient in soufflés and pasta gratins.
Kasseri can be stored in an airtight container in the fridge for at least a couple of weeks.
