Basic cooking instructions:

• Thaw chops overnight in the fridge. Pat completely dry before cooking.
• Season with salt, pepper, and fresh rosemary (or thyme).
• Heat a heavy pan over medium-high heat with oil.
• Sear chops 2–3 minutes per side for medium-rare (internal temp 130°F / 54°C).
• Add 2 tablespoons butter, 2 garlic cloves, and herb sprigs during the last minute.
• Baste chops with butter for 30 seconds.
• Rest for 5 minutes. Serve warm.
