Maison Metzger, a renowned Parisian butchery, sources this half saddle of lamb from Sisteron in the Alpes-de-Haute-Provence—an area known for its deep-rooted lamb farming tradition. The IGP-certified lambs roam freely and feed on local herbs and grasses, giving the meat its delicate, natural flavour.

This boneless shoulder cut is Label Rouge and IGP certified, prized for its tenderness, fine marbling, and mild, clean taste. Ideal for roasting or slow cooking, it delivers rich, juicy bites with every serving.

Pair with a glass of Terrasses du Larzac AOC, Le Juge, Château Capion Rouge, 2020. The wine’s dark fruit, soft spice, and balanced tannins enhance the lamb’s subtle herbal notes.

Basic cooking instructions:

  1. Preheat oven to 180°C.
  2. Bring meat to room temperature 30 minutes before cooking.
  3. Season generously with salt, pepper, garlic, and rosemary.
  4. Sear in a hot pan on all sides until browned (approx. 3–4 minutes per side).
  5. Transfer to a roasting dish and roast for 45–60 minutes, depending on size and desired doneness.
  6. Rest for 10–15 minutes before slicing and serving.
