Also known as Carré d’Agneau, this lamb rack is a cut from the ribs, renowned as one of the finest lamb cuts. Our Lamb Rack is meticulously French trimmed, meaning the backbones and cartilage are expertly removed.

This cut features a gentle yet distinctive flavour, offering versatility for discerning palates. The meat is succulent and tender, with a subtle sweetness that harmonizes perfectly with various seasonings and culinary styles.

To preserve its exceptional quality, store the meat in your freezer. For optimal defrosting, consider either submerging the product in cold water or refrigerating it overnight.

How to eat?

Rest the lamb at room temperature for 1 hour, then preheat the oven to 230°C, score, season, and place the lamb bone-side down on a foil-lined pan, protecting rib bones with foil. Roast at 230°C for 10 mins, reduce to 150°C for 10-20 mins and rest the meat for 15 mins before slicing.
