Whether roasted whole or grilled to perfection, the juicy, tender ribs are best enjoyed with a simple herb crust or a light marinade that enhances their natural flavour. This lamb rack offers a sophisticated dining experience that is both delicious and memorable.

Simple Cooking instructions:
1. Bring the rack to room temperature for 30 minutes. Preheat oven to 200°C (180°C fan).
2. Season generously all over with salt, pepper, and fresh herbs like rosemary and thyme.
3. Sear the rack in a hot, oiled ovenproof skillet for 2-3 minutes per side until browned.
4. Transfer the skillet to the oven and roast for 12-15 minutes for medium-rare (internal temperature of 57-60°C).
5. Let the rack rest, loosely covered with foil, for 10 minutes before slicing into individual chops.

    Very tender lamb, but a bit difficult to cut between the ribs (I pan seared them) because the meat is a bit small.
