Lamb Tenderloin, also referred to as eye fillet, offers a subtly distinct flavour profile, providing a versatile canvas for your culinary inspirations. It represents the lamb’s most tender and delicate cut, ensuring a melt-in-your-mouth experience.

To preserve its quality, store the meat in your freezer. For optimal defrosting, either immerse the product in cold water or refrigerate it overnight.

How to eat?

Rest the lamb at room temperature for 1 hour. Preheat the oven to 230°C. Score the fat, season, and place the lamb rack bone-side down on a foil-lined roasting pan. Protect the rib bones with foil. Roast at 230°C for 10 minutes, then reduce to 150°C for 10-20 minutes. Rest for 15 minutes before slicing.
