Maison Duculty, established in 1816, has been a family-run charcuterie for five generations, specializing in traditional French cured meats. Located in the Parc Régional du Pilat, south of Lyon, the region’s natural climate provides ideal conditions for curing meats. The family has passed down authentic methods, focusing on high-quality pork and time-honored recipes. Maison Duculty’s dedication and savoir-faire are unmatched, having won numerous awards and accolades, including a bronze medal at the Concours Général Agricole in 2022 for their Saucisson Sec Pur Porc. Recently, in 2025, they secured three gold medals at the Concours de Lyon for their Coeur de Jambon Plat, Dry Sausage and Rosette, further cementing their status as masters of charcuterie.
Their Lonzo, a specialty made from 100% French Pork, finspired by Corsican traditions, is crafted from the pork loin, a lean yet tender cut. After being carefully salted, it’s air-dried and aged for a minimum of eight weeks, developing a firm texture and a mild, nutty flavor. The meat showcases a delicate marbling, with a harmonious balance of lean muscle and subtle fat. Its aroma is invitingly savory, carrying hints of aged spices.
For an authentic tasting experience, pair this Lonzo with a nutty Comté or a creamy Saint-Félicien, both of which complement its nuanced flavors. To further enhance the experience, consider a crisp Chablis or a bold Côtes du Rhône red wine.
