Cliff and Julie Dyball are third generation dairy farmers, their longstanding dream of making cheese became a reality in 2021 when they acquired The Traditional Cheese Dairy. They relocated operations from Stonegate to Waldron, East Sussex, where their family has been producing milksince 1962. They are dedicated to preserving traditional farming methods and prioritizing animal welfare and sustainable practices.

Lords is a robust cheese with a natural rind, offering a wonderpiecey savoury profile that hints at caramelized hazelnuts while also featuring fresh, grassy notes in its flavour.

It pairs wonderpiecey with quince jelly and pears, and can serve as a Parmesan alternative as well.

Keep it in the fridge, wrapped in cheese paper.

    This is the sort of love child of manchego and a dry crumbly very mature cheddar. But somehow for me it’s not as nice as either – I could see it working as a grated topping like parmesan, and it is certainly better on a cheeseboard if there is some fruit jelly/preserve – it’s rather “robust” on its own for my taste.
