The flavour of this pork is very nice, as described. But an absolutely key point is that you have to have a means of slicing it really thinly – this is hard to do with even a very sharp knife. I wonder if perhaps CheeseClub could offer this pre-sliced since I’m sure they must have a slicing machine? Otherwise it is really rather chewy!
