Quesos El Pastor, founded in 1967 in Zamora, Spain, has grown into a global name in cheesemaking, but its Manchego Curado remains deeply rooted in tradition. Manchego cheese dates back to the time of Don Quixote, with its iconic herringbone rind pattern originating from the woven esparto grass molds once used in its production. Aged for six months, this cheese embodies the rich pastoral heritage of La Mancha, a region known for its vast plains and Manchega sheep, whose milk gives Manchego its distinctive character.
This semi-hard cheese has a firm, ivory interior with occasional small holes and a natural rind marked by its signature pattern. Its aroma is rich and buttery, with hints of toasted nuts. The taste is smooth yet complex, balancing a mild tanginess with nutty and herbal notes, leading to a long, savoury finish. The texture is firm but creamy, making each bite satisfyingly rich.
