Cheese Type: Blue
The texture of this Spannish blue cheese is not too soft, the paste is at the right point of smoothness, ready to melt on the tongue and the palate. The flavours are complex with earthy notes, creamy and sweet, but with the typical final itch on the tip of the tongue, but without being too strong. The sweetness is mixed with salty, spicy, and sheep notes that complete an excellent blue cheese.
In the kitchen it is excellent chopped on salads, or to flavour soups and cheese sauces.
Wine Pairing:
White wines (Sauvignon Blanc, Cotes du Roussillon, Sancerre)
