This cheese features a firm, dense texture and a complex, balanced flavour profile. It delivers pronounced notes of roasted nuts and caramel, with a pleasant saltiness and a slightly fruity finish characteristic of its extended aging.
Ideal for both the table and the kitchen. Grate it over gratins and pasta, melt it into a traditional fondue, or enjoy it on a cheese board with crusty bread and cornichons. It pairs beautifully with a dry white wine from the Savoie region or a light red.
Storage: Keep refrigerated, wrapped in wax paper or in a breathable container. For the fullest flavour, let it rest at room temperature for about an hour before serving.
