Staying true to tradition, it is carefully aged on wooden boards in a humid cellar for up to eight months, with a meticulous brushing process that enhances its natural rind.
This semi-hard cheese has a vibrant orange hue, a firm, crumbly texture, and a nutty, slightly sweet flavor that deepens with age. A favorite of General de Gaulle, this Mimolette is a true regional treasure.
To enhance the tasting experience, pair Mimolette de la Côte d’Opale with a Chardonnay. The wine’s balanced acidity and notes of citrus and oak complement the cheese’s rich, nutty flavours, creating a harmonious and indulgent pairing.
