Mini Eggplant Graffiti from Spain

Beautifully striped and wonderfully tender, Mini Graffiti Eggplants bring colour and Mediterranean character to the kitchen. Their glossy violet skin is brushed with creamy white streaks – like a hand-painted pattern – while the small size makes them ideal for quick, elegant cooking. Graffiti eggplants are known for their thin skin, small seeds, and sweet, mild flavour, with far less bitterness than larger conventional eggplants.

Once cooked, their pale flesh becomes soft, creamy and almost melting, with a subtly fruity sweetness and delicate nutty notes. Their firmer texture means they absorb less oil than some larger eggplant varieties, so they roast, grill and pan-fry beautifully without becoming heavy.

Simply halve or quarter the mini eggplants, toss with extra-virgin olive oil, sea salt, garlic and herbs, then roast until golden and tender. Their natural sweetness pairs particularly well with creamy cheeses and bright Mediterranean flavours such as tomato, lemon, garlic, basil and mint.
