Moliterno is an Italian cheese named after the town where it originates in the southern region of Basilicata. While it is aging, the Moliterno is rubbed with olive oil and vinegar to retain its moisture. The paste is firm and crumbles with a rich golden colour. Its aroma is a balance of rustic and sweet fragrances. It is infused with Italian black truffles, giving it an intense earthy flavour and a beautiful marbled look. Add a Barolo red wine made in the Piedmont region to pair with your cheese!
