While it is aging, the Moliterno is rubbed with olive oil and vinegar to retain its moisture. The paste is firm and crumbles with a rich golden colour. Its aroma is a balance of rustic and sweet fragrances. It is infused with Italian black truffles, giving it an intense earthy flavour and a beautiful marbled look. Add a Barolo red wine made in the Piedmont region to pair with your cheese!
