In 1998, Martine Lembeye, the daughter of a cheesemaker, created a local cheesemaking venture to safeguard the traditional cheesemaking heritage of the Béarn and Basque valleys against industrialization. This artisanal approach has fueled the cheese factory’s success, and it continues as a family-run business, now with Sébastien Lembeye, Martine’s son.
This distinctive cheese, crafted from sheep’s milk and matured in the elevated terrains of Soudet’s salting tub, exudes strong character. With its washed orange rind, it offers a sturdy yet velvety texture, marked by a remarkably prominent floral aroma and a lingering, rich flavour.
Great to eat it anytime with walnuts, apple or cherries to bring freshness to this mountain cheese.
