Ceps, also known as porcini mushrooms, have a rich history and were first documented in the writings of the ancient Romans, who relished their exquisite flavour. Nowadays, ceps are used a lot in the world of cuisine and are often referred to as the “king of mushrooms”
Ceps have a rich, earthy flavour, often described as deep and nutty. Their taste is characterized by a subtle umami essence, making them a prized ingredient in various cuisines.
Place the mushrooms in your freezer. To recapture all the flavours of porcini mushrooms, simply immerse the frozen mushrooms in salted boiling water. When it returns to a boil, cook for 5 minutes. Then, rinse them in cold water using a colander and drain them by placing them on a cloth. Save the cooking water to make your sauce.
Enjoy Ceps in various ways. You can cook them briefly with a hint of garlic in a hot pan. They also make an excellent addition to risottos and pasta dishes. Pair them with meats like beef or poultry for a savoury delight.
